A one-pot wonder of everything good in this Chicken and Sausage Jambalaya. A bowl filled with long grain rice, chicken cubes and sliced andouille sausage, crunched up with red onion, green bell pepper and chopped celery and seasoned with chopped tomatoes, Cajun spice, Turkish bay leaves and chicken stock. A flavor for every food-lover to enjoy!
To make Chicken and Sausage Jambalaya, you will need the following ingredients:
Heat oil in large heavy skillet on medium-high heat, add chicken and sausage. Cook while stirring for 5 minutes until sautéed. Remove from skillet and set aside.
Discard excess oil and add onion, bell pepper and celery to the skillet. Cook while stirring, over medium heat, until onion is softened.
Add chopped tomatoes, Cajun seasoning and bay leaves and stir through.
Add sautéed chicken and sausages back into the skillet.
Add rice and chicken stock to skillet and bring to a boil then reduce heat.
Cover with lid and cook for 25 minutes, stirring occasionally until rice is cooked.
Remove bay leaves before serving hot. Enjoy!
