2 cloves Garlic minced
1 Onion chopped
3 Carrots sliced
1 tsp Parsley fresh, chopped
1 tsp Sage fresh, chopped
1 tsp Rosemary fresh, chopped
1 tsp Thyme fresh, chopped

This Chicken Song Soup is my take on a true classic. A bowl of this soup is comforting and it makes a hearty cure for winter chills. This recipe is not only really easy to make, it tastes delicious too. By cooking the chicken in the soup broth, a rich flavor develops.

It’s perfect for a quick lunch or dinner and it’s versatile recipe so you can play around with it a bit. You can change it by using noodles instead of rice, or you can add extra vegetables if you want to bulk it up. This is a recipe that I cook very often because it’s a delicious way to get vegetables into my kids without complaints. It’s a perfect recipe for any day of the week!

So, how do you make Chicken Song Soup?

Steps to make Chicken Song Soup

Cook the chicken

Place the chicken breasts and 8 cups of water in a large pot. Season with the salt and pepper and bring to a boil over a high heat.

Simmer

Turn the heat down to medium-low. Place a lid on the pot and simmer for about 1 hour.

Remove the chicken

Once the chicken is falling off the bone, remove it from the pot and set to one side. Allow to cool.

Cook the rice

Once the chicken has been removed add the rice into the broth.

Add the rice and vegetables to the broth

Then mix the garlic, onion, carrots, celery, parsley, sage, rosemary, and thyme into the broth. Return to a simmer.

Shred the chicken

As the vegetables simmer, take the skin and bones off the chicken and discard them. Shred the chicken meat, and stir it into the soup.

Cook through

Simmer for about 30 minutes until the vegetables are tender.
