Ingredients

400 g can Chickpeas drained
Zest of 1 Lemon plus juice ½
1 tsp Cumin ground
small bunch of Coriander chopped
1 Eggs
100 g fresh Bread crumbs
1 medium Red onion ½ diced, ½ sliced
1 tbsp Olive oil
To serve:
4 small whole grain Hamburger buns
1 large Tomatoes sliced
½ Cucumber sliced
Hot chili sauce to taste

Chickpea and Coriander Burgers are one of my favorite veggie burgers. I love chickpeas as a meat free alternative – they are packed with protein and fiber which makes them filling as well as healthy. 

It couldn’t be easier to make these veggie burgers. Start by mixing all of the ingredients together in a food processor until the mixture comes together. Shape the mixture into 4 burgers and chill in the refrigerator for about 10 minutes. Fry on medium heat for about 4 minutes on each side. Serve in a bun with tomato, cucumber, red onion and chili sauce. Enjoy!

Steps to make Chickpea & Coriander Burgers

Make the falafel mixture

Place the canned chickpeas in the bowl of a food processor with the zest of one lemon, plus the juice of ½ a lemon, 1 teaspoon of ground cumin, ½ a bunch of chopped coriander, one egg, and some seasoning. Blend until the mixture comes together.

Add onions and bread crumbs

Transfer the mixture to a large bowl. Add 80 grams of the bread crumbs and ½ a diced onion.

Shape burgers

Shape the mixture into four burgers using your hands. Press the remaining bread crumbs onto each side of the burger and chill in the refrigerator for 10 minutes.

Cook

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat until hot. Add the burgers and fry on medium for 4 minutes until lightly golden on each side.

Serve

Serve each burger in a small whole grain bun with a slice of tomato, red onion slices, cucumber slices, a spoon of chili sauce and the remaining coriander.
