This Chocolate Crazy Cake recipe is hands down one of the best chocolate cakes I have ever tasted. The best thing about it? If you use coconut oil for the frosting, this cake is completely dairy free, meaning it is a great recipe to make for someone who is allergic to dairy.
To make this cake, start by mixing the dry ingredients together. Gradually add in the remaining ingredients, starting with coconut oil, vanilla and water. Next add the coffee and vinegar. Don’t be concerned if the batter starts to foam up. This is normal as the baking soda reacts with the acid in the vinegar. Transfer the batter to the pans and bake. Make frosting by mixing sugar, cocoa powder, butter or coconut oil, vanilla, water and sea salt together. Frost the cake and enjoy!
To make Chocolate Crazy Cake, you will need the following ingredients:
Preheat the oven to 375 °F. Lightly grease and flour two 9-inch round baking pans.
Mix 3 cups of flour, 2 cups of sugar, 1 teaspoons of salt, 6 tablespoons of cocoa powder, 2 teaspoons of baking soda, and ½ a teaspoon of ginger together in a large baking bowl. Stir well until all ingredients are fully combined.
Mix melted and cooled ¾ cup of coconut oil with 1 teaspoon of vanilla and 2 cups of warm water. Add to dry ingredients and stir well.
Pour in 1 tablespoon of strong coffee and 2 tablespoons of apple cider vinegar. Stir well to remove any lumps from the batter.
Transfer half of the batter to each of the prepared baking pans. Bake for about 25 minutes. Remove from the oven when a toothpick inserted in the center comes out clean.
Remove the cakes from the oven and leave to cool completely on a wire rack.
In a separate bowl, mix 3½ cups of powdered sugar with 1¼ cups of cocoa powder and a pinch of salt. Add one teaspoon of vanilla extract and ¼ cup of coconut oil. Gradually pour in ½ a cup of water, stirring well between additions until the icing has the right consistency for spreading.
Place one of the cakes on a plate and spoon some of the frosting on top. Spread it out using a palette knife before placing the second cake on top. Spoon the remaining frosting on top and spread it around the top and sides of the cake.
Serve on its own and enjoy.
