These adorable Christmas Tree Cookies are naturally colored with kale (you won’t taste it) and decorated with sweet ribbons of icing and tiny bits of cranberries. These sugar cookies make for a great homemade gift and a beautiful addition to your next cookie box.
For this recipe, you’ll need 4 tablespoons kale purée. Making it is almost too easy and fast. To make the kale purée: Remove the stems and save them for another recipe. You will need just the leafy parts of the kale. Fill a medium pot with water and bring to a boil. Add the kale and cook, uncovered, until wilted but still bright green, about 5 minutes. Drain immediately and refresh the kale under cold running water. Use a hand blender to purée the kale until smooth. Make sure the purée is completely cool before adding to the recipe.
To make the Christmas Tree Cookies, you will need the following ingredients:
Heat the oven to 350 °F. Line a baking sheet with parchment paper.
In a large bowl, mix together 1 ⅔ cups flour, ⅔ cup butter, and ½ cup sugar. Add 1 teaspoon of vanilla extract.
Stir in 4 tablespoons kale purée.
On a lightly floured surface, roll out the dough to ¼-inch thickness.
Cut the dough into triangles or cut out the cookies using a Christmas tree cutter. Transfer the cookies to the prepared baking sheet.
Bake the cookies for 12 minutes. Let cool.
In a bowl, stir together 1 cup powdered sugar and enough hot water until the icing is thick but still pourable.
Once the cookies are completely cool, decorate them with icing and cranberry pieces. Let sit to dry.
