This Cider, Apple and Sausage Casserole is a simple one pot casserole which is a great dish to make this fall. I think apple cider and sausages are a match made in heaven. The slight sharpness of the cider helps to cut through the richness of the sausages.
Start by preparing the veggies by chopping them into bite sized chunks. Place a large casserole dish, which has a lid, over a medium heat. Fry the sausages until they are lightly browned all over. Remove the sausages to a plate. Place apples, onions, carrots and new potatoes in the pan and cook over medium heat until slightly softened. Stir in the flour and return the sausages to the pan. Stir in the sage and black pepper. Pour in the cider, stir, cover and cook for 45 minutes. Yum!
To make my Cider, Apple and Sausage Casserole, you will need the following ingredients:
Heat the oven to 355 °F.
Peel and chop 3½ ounces onions and carrots. Slice 10 new potatoes in half or quarter depending on size. Core and chop 3 ½ ounce apples.
Place a large oven-proof saucepan over medium heat. Add the sausages and fry until brown all over. Transfer the sausages to a plate.
Add the chopped apples, onions, carrots and new potatoes to the same saucepan and fry over medium heat until slightly softened.
Sprinkle 1 tablespoon of flour into the pan and cook for a few minutes until the apples and vegetables are lightly browned.
Return the sausages to the pan and add sage and black pepper. Pour in 1⅓ cups of apple cider. Stir well.
Place the lid on the pan and place it in the oven to cook for 45 minutes.
Serve immediately in large bowls.
