Soft and oniony, these Classic Smothered Potatoes are a doddle to make. What is it about kids and potatoes? Pretty much any way you serve them up, they seem to love them. For my little ones, no dish is complete without a side portion of spuds in some form – fried, baked, mashed – they love them all!

So I’m on a bit of a mission to find new ways to serve up the simple potato. This here is a basic recipe for that old southern classic, smothered potatoes, loved by my kids for being soft and mushy, with just a little bite left in the potatoes and a great flavor from the onions.

To make Classic Smothered Potatoes, you will need the following ingredients:

Steps to make Classic Smothered Potatoes

Prepare flour coating

Add the flour to a shallow dish or bowl.

Prepare the potatoes

Season the potato cubes with a pinch each of salt and pepper. Dredge them in the flour until well coated and then place in a bowl.

Add the onions

Add the onions to the potato cubes and mix well.

Heat the oil

Place a pan over a medium-high heat and add the oil to heat.

Cook the potatoes

Add the potato and onion mixture to the pan and fry until golden brown, giving the mixture a stir every so often.

Simmer the potatoes

Lower the heat right down and pour the water into the pan. Cover with a lid and simmer for 20 minutes, until the potatoes have softened.
