At this time of year I love to make Concord Grape Cornmeal Cake. It is so tasty. My family loves it and I know yours will too! The secret to making this cake is to add the grapes and stages. cook half of the grapes from the beginning and add the other half halfway through the cooking time.
To make this cake, start by combining flour, cornmeal and baking powder with salt in a medium bowl. In a separate bowl, whisk eggs, sugar, lemon zest and vanilla. Add oil and melted butter and whisk to combine. Incorporate the dry ingredients, followed by the buttermilk. Finally, stir in honey but try not to fully incorporate it at this stage. Transfer the batter to the baking dish and scatter half of the grapes over the top. Bake the cake in the oven, removing halfway through to scatter the remaining grapes on top. Return the pan to the oven and continue to bake until golden brown. Serve warm with your favorite ice cream.
To make Concord Grape Cornmeal Cake, you will need the following ingredients:
Preheat the oven to 350 °F and grease an 8 by 8-inch baking dish with butter.
In a large bowl, mix ½ a cup plus 2 tablespoons of flour, ½ a cup of cornmeal, 1 teaspoon of baking powder and half a teaspoon of salt together.
Whisk 2 eggs, ½ a cup of sugar, 1 teaspoon of finely grated lemon zest and ½ a teaspoon of vanilla extract together in a separate bowl. Add ¼ cup of vegetable oil and 2 tablespoons of melted butter. Whisk until fully blended.
Add the flour mixture to the egg mixture then add 6 tablespoons of butter milk. Swirl in 2 tablespoons of honey but do not fully incorporate.
Mix half of the grapes with a pinch of flour and toss to coat.
Transfer the batter to the baking dish.
Scatter the flour-coated grapes over the top of the cake batter.
Bake for about 8-10 minutes until it starts to turn golden brown around the edges. Remove from the oven and scatter the remaining grapes over the top.
Return to the oven and bake for 20 to 25 minutes longer, until the top is golden brown.
Cool on a wire rack and serve with ice cream.
