I don’t know about you, but I actually prefer savory muffins to sweet ones, and these Cottage Cheese Muffins make a delicious healthy snack that will taste good at any time of the day. Try them for breakfast with a boiled egg or with some hummus as a mid-afternoon snack.

To make these delicious muffins, start by melting butter. Add cottage cheese, buttermilk, eggs, and Cheddar cheese to a large mixing bowl and stir in the melted butter. Sift dry ingredients together and add to the cheese & egg mixture. Stir the mixture until just combined before distributing the batter evenly between 12 standard muffin cups. Bake the muffins until golden. Leave to cool slightly before devouring.

Steps to make Cottage Cheese Muffins

Heat the oven and prepare muffin tray

Preheat the oven to 350 °F. Lightly grease a muffin tin.

Mix cheese and wet ingredients

Combine 1 cup of cottage cheese with ½ a cup of buttermilk, 3 large, beaten eggs and 1 cup of grated Cheddar cheese in a large mixing bowl. Stir in ½ a cup of melted butter.

Combine dry ingredients

In a separate bowl, sift together 1¾ cups of flour, ¼ cup of fine cornmeal, 3 tablespoons of sugar, 1 tablespoon of baking powder, ½ a teaspoon of baking soda, and ½ a teaspoon of salt.

Mix wet and dry ingredients

Add the dry ingredients to cheese/egg mixture. Stir just until combined and you have a thick batter.

Transfer batter to muffin pan

Distribute the batter evenly between 12 standard muffin cups.

Bake in the oven for 25-30 minutes.

Remove the pan from the oven and leave to cool for a few minutes.
