A warm and tasty, delicious homemade Courgette, Potato and Cheddar Soup that you can adapt to be vegetarian friendly too. Thick, creamy and cheesy and perfect for the summer time as a dinner party starter or even a small meal.
Save some spring onion and extra cheddar cheese to sprinkle over the top of your soup bowls, for that special touch when serving.
To make Courgette, Potato and Cheddar Soup, you will need the following ingredients:
In a large pan, place the potatoes with just enough water to cover them and crumble the stock cubes into the water. Bring to the boil, cover and cook for 5 minutes.
Add courgettes, cover again and cook for another 5 minutes.
Add spring onions, cover and cook again for a further 5 minutes.
Remove from heat, stir in the cheese and season your soup with nutmeg, salt and pepper.
Using a hand blender, blend your soup to a thick and smooth texture. Add more hot water until you get the preferred consistency.
Serve hot with grated cheddar cheese, spring onions, nutmeg and pepper scatter on top.
Allow to cool and freeze for up to 3 months.
