500g Potatoes unpeeled and roughly chopped
2 cubes Vegetable stock
1kg Courgettes roughly chopped
1 bunch Spring onions sliced (save 1 for serving, if eating straight away)
100g Cheddar cheese extra-mature cheddar or vegetarian alternative, grated, (save extra to serve)
1 tsp Nutmeg good grating fresh(save extra to serve)

A warm and tasty, delicious homemade Courgette, Potato and Cheddar Soup that you can adapt to be vegetarian friendly too. Thick, creamy and cheesy and perfect for the summer time as a dinner party starter or even a small meal.

Steps to make Courgette, Potato and Cheddar Soup

Boil potatoes

In a large pan, place the potatoes with just enough water to cover them and crumble the stock cubes into the water. Bring to the boil, cover and cook for 5 minutes.

Add courgettes

Add courgettes, cover again and cook for another 5 minutes.

Add spring onions

Add spring onions, cover and cook again for a further 5 minutes.

Season soup

Remove from heat, stir in the cheese and season your soup with nutmeg, salt and pepper.

Blend

Using a hand blender, blend your soup to a thick and smooth texture. Add more hot water until you get the preferred consistency.

Serve

Serve hot with grated cheddar cheese, spring onions, nutmeg and pepper scatter on top.

Store

Allow to cool and freeze for up to 3 months.
