If you don’t have an Italian seasoning blend on hand, no problem: Just mix 1 ½ teaspoons dried oregano, 1 teaspoon dried marjoram, 1 teaspoon dried thyme, ½ teaspoon dried basil, ½ teaspoon dried rosemary, and ½ teaspoon dried sage. This is one of my favorite blends and my go-to seasoning for everything from soups to roasted veggies, chicken, and fish. Store this homemade seasoning blend in a sealed container and use it in any recipes that call for an Italian seasoning blend. This vibrant tomato and ravioli soup is made in one pot, and you can have it on the table in about 30 minutes.
To make the Creamy Tuscan Ravioli Soup, you will need the following ingredients:
In a dutch oven over medium-high heat, heat 1 tablespoon olive oil and add 1 diced onion and 3-4 diced carrots. Sauté until tender for about 6 minutes.
Add 4 minced garlic cloves and 1 teaspoon Italian seasoning blend and cook, stirring, for 1 minute.
Add 3 cups vegetable broth and 28 ounces crushed tomatoes and stir well to combine. Bring the soup to a rolling boil, then reduce heat to low. Cover and simmer for 10 minutes.
Once the carrots are tender, bring the soup to a medium simmer and then stir in 9-10 ounces fresh ravioli. Cook for about 5 minutes until the ravioli are fully cooked and softened.
Stir in ½-¾ cup heavy cream and remove the soup from heat.
Stir 1-2 cups baby spinach into the hot soup and allow the greens to wilt. Taste and season with salt and black pepper.
Ladle the soup into bowls, garnish with crushed red pepper flakes and chopped basil and serve hot!
