To make Cucumber and Avocado Sushi, you will need the following ingredients:
In a saucepan bring water and rice to a boil. Cover, reduce heat to low and simmer for 20 minutes until rice is tender and water has been absorbed.
Remove from heat, add vinegar and salt and stir to combine. Set aside to cool completely.
Cover a bamboo sushi mat with plastic wrap to prevent the rice from sticking.
First place a sheet of seaweed over the plastic wrap then spread the rice evenly over the sheet, leaving ½-inch seaweed uncovered.
Arrange strips of cucumber and avocado across the center.
Lift the mat and roll over the vegetables once and press down to secure. Unroll then roll again towards the uncovered end of seaweed to make a long roll. Moisten seaweed with a little water to seal the end. Set aside and continue with remaining ingredients.
Use a sharp knife to slice into 5-6 slices per roll.
Serve cut side up with soya, ginger and wasabi.
