These Cucumber and Pimiento Cheese Tea Sandwiches are perfect for picnics or afternoon tea, in my opinion. This recipe is super simple and the best thing is it provides a variety of sandwiches. Creamy fresh cucumber sandwiches contrast really nicely with hot yet creamy pimiento cheese sandwiches.
To make these delicious sandwiches, start by mixing cream cheese, mayo, dill, garlic salt, and lemon pepper. Spread on half of the bread slices. Top one slice of the bread with cucumber and sandwich together with the other half. Next, do the same with the pimiento cheese sandwiches – mix mayo, cream cheese, pimiento, juice, garlic salt, onion powder, ground mustard, and few dashes of hot sauce. Combine with shredded cheese and spread on slices of bread. Cut the crusts off the bread and cut into squares or circles using a 2-inch round cutter.
To make these Cucumber and Pimiento Cheese Tea Sandwiches, you will need the following ingredients:
Combine a container of chive & onion cream cheese with ¼ cup of mayo, 2 teaspoons of chopped fresh dill, ½ a teaspoon of garlic salt, and ¼ teaspoon of lemon pepper in a small mixing bowl.
Spread the cream cheese mixture evenly on 12 slices of bread.
Arrange cucumber slices on six slices of bread and then top with one of the remaining six slices.
Cut the crusts off the bread and cut into squares or use a 2-inch round cutter to cut the sandwiches into circles.
Whisk together ⅔ cup of mayo with 4 ounces of softened cream cheese, a 2-ounce jar of diced pimiento, ¼ teaspoon each of garlic salt, onion powder and ground mustard. Add a few dashes of hot sauce, to taste.
Add 1½ cups of shredded sharp Cheddar cheese to the pimiento spread.
Divide the pimiento cheese mixture evenly between 12 slices of bread. Press the slices of bread together to make sandwiches.
Cut the crusts off the bread and cut into squares or use a 2-inch round cutter to cut the sandwiches into circles.
Store in the refrigerator until you are ready to serve.
