This Chicken Pizzaiola recipe is an easy and tasty chicken dish you should definitely try! Loaded with vegetables and coated in a delicious sauce. Pizzaiola means ‘in the style of pizza’, i.e. containing all your favorite pizza ingredients! And apart from the cheese, that’s true for this recipe.
Bell peppers, tomatoes, oregano, crushed red pepper – all the best pizza toppings combined here to make a yummy sauce, bulked out by some potatoes, that will coat the perfectly cooked chicken breasts. The recipe is easy to follow too, just brown the meat off first, cook everything else together in the same pan and then spoon the sauce over before baking. Try this one evening this week, you’re bound to enjoy it!
To make Chicken Pizzaiola, you will need the following ingredients:
Preheat the oven to 350 °F. Lightly grease a rectangular baking dish.
Sprinkle each side of the chicken with salt and pepper.
Place a large skillet over a medium heat and add the oil. Once hot, add the chicken and cook for 2-3 minutes on each side until completely browned.
Remove the chicken with a slotted spoon and place in the baking dish, covering the dish tightly with a sheet of aluminum foil.
To the same skillet, add the peppers and potatoes, along with the onion powder, crushed red pepper and oregano. Cook for 10-15 minutes, stirring regularly, until the vegetables have softened.
Add the chicken broth, tomatoes, and tomato paste. Stir and then bring everything to a boil.
Take the pan off the heat and pour the contents over the chicken, before resealing the foil.
Bake the chicken for around 30 minutes until cooked through. The temperature at the center of the chicken should read a minimum of 165°F.
