This Easy Vegan Sheet Pan Dinner is a light and fresh meal that you can prep in only 10 minutes and takes another 30 minutes to cook. Serve this baked one-pan meal as it is or if you are feeling hungry, serve with rice or quinoa.
Start by preparing the vegetables. Place them in a large bowl and season with garlic powder, Old Bay seasoning, Italian seasoning and salt. Drizzle with olive oil. Spread a layer of veggies on two sheet pans and bake in the oven. Serve with rice, lentils or quinoa, topped with hummus or cashew cream.
