These Eggless Dalgona Coffee Muffins are so tasty – you won’t even miss the eggs! Dalgona coffee is a creamy whipped coffee which has recently gone viral on social media. They have a two-tone appearance with a coffee and vanilla layer so they look fantastic and taste great with coffee too.
It couldn’t be easier to make these muffins. Start by mixing dry ingredients. Combine instant coffee and warm water in a small bowl and set aside. Whisk yogurt and powdered sugar until fully combined. Add milk, oil, and vanilla extract and whisk until smooth. Next, combine dry and wet ingredients and gradually fold in milk. Add half of the batter to muffin papers, leaving space for more batter on top. Mix the coffee mixture with the remaining batter and fold together. Add the coffee batter on top of the vanilla and tap the muffin tray once or twice to remove air bubbles. Bake until a toothpick comes out clean. Enjoy with a hot cup of coffee or tea.
To make these Eggless Dalgona Coffee Muffins, you will need the following ingredients:
Sieve 1 cup of all purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of baking soda together in a large bowl. Set aside.
Combine 1 ½ teaspoons of instant coffee and 1 teaspoon of water. Set aside.
Whisk ¼ cup of yogurt and ½ a cup of powdered sugar until the sugar is completely dissolved. Add ¼ cup of milk, ¼ cup of oil, and 1 teaspoon of vanilla extract and whisk again until all the ingredients are fully combined.
Preheat the oven to 340 °F.
Combine the wet and dry mixtures and gradually fold in the remaining 3 tablespoons of milk.
Place paper liners in a muffin tray. Add half of the vanilla batter to the liners using a spoon. Fill them up to ⅔ full. Leave some space for more batter and for the muffins to rise.
Add the reserved coffee mixture to the remaining batter and fold in.
Add the coffee batter to the vanilla batter in the muffin liners. Tap the muffin tray once or twice to remove air bubbles.
Bake in the preheated oven for 15 minutes. Remove from the oven when a toothpick inserted in the center of a muffin comes out clean. If there are crumbs on the toothpick, leave for 2-3 more minutes.
Serve with tea or coffee.
