2 tbsp Butter melted, cooled, plus more butter for the pan
1 cup Blueberries plus more for serving

To whip these easy pancakes up, mix the milk and a few tablespoons of vinegar first and set it aside for a few minutes. Next, whisk together the dry ingredients. Then whisk the wet ingredients into the dry ingredients and fold in the blueberries. Stir only until the ingredients are incorporated. Now, melt a knob of butter in a nonstick pan and cook the pancakes on both sides until golden brown and fluffy. Serve the pancakes warm with a smear of butter and a drizzle of maple. Enjoy!

Steps to make Fluffy Blueberry Pancakes


Mix milk and vinegar


In a bowl, mix ¾ cup milk with 2 tablespoons white vinegar and set it aside for two minutes.


Combine dry ingredients


In a medium bowl, combine 1 ¼ cups all-purpose flour, 2 tablespoons brown sugar, 1 teaspoon baking powder, ¼ teaspoon baking soda, and ½ teaspoon salt.


Whisk wet ingredients into dry ingredients


Whisk 1 egg, milk, and 2 tablespoons melted butter into the dry ingredients until just combined.


Fold in blueberries


Fold in 1 cup fresh blueberries.


Cook pancakes


In a nonstick pan over medium heat, melt a little butter. Pour about ¼ cup of batter into the hot pan and spread it into a circle about 5 inches wide. Cook for about 1-2 minutes until a few bubbles appear on top, and the edges start to firm up. Flip and cook for another 1-2 minutes until the pancakes are cooked. Repeat with the remaining batter, using extra butter to brush the pan as needed. Transfer to a warm plate.



Serve with butter, maple syrup, and extra blueberries.
