This French Onion Chicken recipe is juicy, scrumptious and full of flavor. I love to make this recipe in the winter time as its warm and filling and the perfect dinner option for a cold and rainy evening.
I pair it with some soft mashed potatoes drizzled with extra onion gravy over the top and a glass of dry French white wine – a good Chardonnay accompanies the caramelized onion flavors just delightfully. Your tastebuds will be singing!
To make French Onion Chicken, you will need the following ingredients:
Heat 2 tablespoons oil in a large skillet over medium heat and add onions, salt, pepper and thyme. Cook at a medium-low heat, while stirring, for about 20-25 minutes, until onions are caramelized and jammy.
Add garlic and cook for a further 1 minute, until fragrant. Remove from the heat, set onions aside and wipe skillet clean.
In a large bowl, mix the salt, pepper and oregano. Toss the chicken in the seasoning and then coat with flour.
In the same skillet over medium-high heat, heat remaining oil and add the chicken. Cook for about 8 minutes on both sides, until mostly cooked through and golden on the outside.
Add the broth and caramelized onions to the grilled chicken. Bring to a boil before reducing the heat to simmer for 10 minutes until chicken is cooked completely and the beef broth reduces and slightly thickens.
Add Gruyère cheese, cover and cook for a further 2 minutes until cheese is melted.
Garnish with parsley for serving.
