This flavorful Vegan Fresh Mint & Lemon Bulgur Pilaf is a great way to get more grains in to your diet. Bulgur wheat is a nutritious cereal grain which is easy to prepare and has a number of health benefits. Bulgur contains a variety of vitamins and minerals, as well as being a good source of fiber. When it’s cooked, its texture is similar to quinoa or couscous, but it has a bit more bite to it which is why I like it so much.
In this recipe, I cook the bulgur directly in the broth with carrot, ginger and salt. Once all the liquid has been absorbed, I add fresh dill, mint, parsley and lemon juice for flavor and I top with with toasted, chopped walnuts. The addition of dill makes this recipe for me as I love the strong, distinctive taste that dill brings to a dish.
To make my Vegan Fresh Mint & Lemon Bulgur Pilaf, you will need the following ingredients:
In a large skillet or pan, heat the oil over medium heat. Reduce the heat to medium-low and add the onion. Cook while stirring often, until the onion is golden brown.
Add the garlic and cook for 1 minute, stirring constantly.
Mix the bulgur, turmeric and cumin with the onion mixture and cook for about 1 minute while stirring until the bulgur is evenly coated with oil.
Pour in the broth and add the carrot, ginger and salt. Once the broth has come to a boil, reduce the heat to medium-low. Cover and cook for about 15 minutes until all the broth is absorbed. Do not stir at this stage.
Once all the broth has been absorbed, remove the pan from the heat. Allow the pilaf to stand, covered, for 5 minutes.
Stir in the dill, mint, parsley and lemon juice.
Top with walnuts and serve.
