My kids adore these Fried Cucumber Rounds, they’re a frequent request in my house! Crispy on the outside and soft and juicy on the inside, this is a quick and simple snack to put together for your little ones.
As you can see, this fried cucumbers recipe only uses 4 ingredients and chances are you already have them in your store cupboard! The great thing is you can use cucumbers of any shape or size and they don’t need to be super fresh, so if they aren’t quite crisp enough for a salad anymore, you can use them for this recipe instead!
To make Fried Cucumber Rounds, you will need the following ingredients:
Place a large skillet over a medium-high heat and add the oil to heat. Lay some paper towel over a plate or tray.
Add the cornmeal to a shallow bowl. Take each piece of cucumber and dunk it in the cornmeal, coating completely.
In batches, fry the cucumber rounds for a couple of minutes on each side until they crisp up and turn a golden brown. Remove with a slotted spoon and lay on the paper towel-lined plate.
Serve hot, sprinkled with a little salt.
