Garlic Butter Rice
This Garlic Butter Rice with Kale recipe is simple and perfect. Think fluffy and flavorful basmati rice, deliciously garlicky and buttery made healthier thanks to nutrient-dense kale. The beauty of this dish is also its simplicity. The kale steams with the rice, so you don’t even have to worry about cooking it – too easy.
Start with the kale. You want a little extra-virgin olive oil and a pinch of salt and black pepper to soften and flavor the kale. Use clean hands to massage the kale for about 1 minute, and set aside. Next, melt the butter. Add the minced garlic and cook for 1 minute until fragrant. Stir in the rice. Cook, stirring, for about 20 seconds, and then pour in the chicken broth. If you want to make this recipe vegetarian, simply use vegetable broth in the same amounts. Cover the pot with a lid and cook the rice until all the liquid is absorbed. Then add in the kale, cover the pot again and let the kale and rice steam for about 10 minutes. Stir in the extra butter, sprinkle with toasted nuts, and serve!
