I love all sorts of berries and that is why this Gooseberry and Strawberry Galette can be found in one of my favorite kitchen recipe books. When in season I just love to make this scrumptious pie.
A delicious treat that can be enjoyed warm and toasted, curled up in front of a wood fire and covered with fresh whipped cream or some vanilla soft serve!
To make Gooseberry and Strawberry Galette, you will need the following ingredients:
In a medium bowl stir the flour, confectioner’s sugar and salt to mix.
Add ⅓ butter and using a pastry blender, cut into pieces in the dough until a coarse cornmeal forms. Then, add the remaining butter and cut through again until the largest butter chunks are the size of peas or a little larger. Randomly, over the dry ingredients mix and pulse a further 10 times until slightly mixed with large chunks remaining.
Gradually drizzle cold milk or water into the flour mixture in several stages, gently tossing the dough until its just holds together. Do not squeeze or overmix the dough. If it does not stick then add another tablespoon of liquid.
Shape dough into a disk-shape, wrap in plastic and refrigerate for at least 30 minutes to overnight.
Remove stems, top and tail, from the gooseberries and hull the strawberries. Cut berries in half or quarters and combine with sugar and lemon zest.
Preheat oven to 375 °F.
Once chilled, roll out the dough into a 35cm diameter circle, onto a well-floured surface about 2-3mm thick. Transfer to a baking sheet lined with baking parchment paper.
Sprinkle ground almonds over the dough, leaving the edges open about 3-4cm, then spoon the fruit with all juices, over the top.
Fold the edges over the fruit to ‘close’ your pie and brush with egg white and sprinkle with castor sugar.
Bake galette in preheated oven for 30 minutes until golden.
Serve warm or at room temperature and enjoy!
