Ingredients

For the pastry:
125g (4 ½ oz) Plain flour
¼ tsp Baking powder
70g (2 ¾oz) Butter
1 pinch Salt
35g (1 ¼ oz) Icing sugar
1 Egg yolks
1 tbsp Water cold
For the gooseberries:
100g (3 ½ oz) Caster sugar
150ml (5fl oz) Water
350g (12 oz) Gooseberries topped and tailed
For the filling:
2 Egg yolks
50g (1 ¾ oz) Caster sugar
75ml (2 ¾ fl oz) Double Cream
½ Lemon zest finely grated

In berry season, I can promise that this Gooseberry Tart will definitely be floating around our home. If there is any leftovers, you can be sure to catch me eating a slice of this rustic berry tart as my afternoon tea treat, too often!

The recipe is really simple to follow with a sweet butter crumb crust and filled with sweet, simmered gooseberries and set in a lemon cream – one of my favorite flavor combinations!

So, how to make Gooseberry Tart?

Steps to make Gooseberry Tart

Prepare pastry

Using a food processor, blend the flour, baking powder, butter, salt and icing sugar until you have a breadcrumb-like mixture. Then add the egg yolk and water, while the motor is still running, until the pastry comes together and forms a ball.

Refrigerate

Wrap in plastic wrap and refrigerate for about 30 minutes.

Prepare gooseberries

Gently heat the sugar and water together, stirring occasionally, until the sugar dissolves. Bring to a simmer and add the gooseberries then cook for 3 minutes until the berries have just softened. Scoop out from the water and set aside.

Set pastry

Remove pastry dough from refrigerator and bring to room temperature then roll it out onto a floured surface to fit a 9-inch tart tin. Press the dough into the tin, trim off excess pieces and refrigerate or freeze for a further 30 minutes.

Preheat oven and prepare baking sheet

Preheat the oven to 190°C and place a metal baking sheet inside. Line the pastry tin with parchment paper and beans and place inside the oven for 10 minutes, then remove the beans and parchment paper and allow the pastry base to cool.

Beat eggs and sugar

Using an electric whisk, beat the egg yolks and sugar for 10 minutes until the mixture is triple in size.

Add cream and zest

Add the cream and zest and mix to combine.

Prepare tart

Place the gooseberries over the pastry base and pour the lemon and cream filling over the top.

Bake

Bake tart in the heated oven for 25-30 minutes.

Cool

Remove from the oven and allow to cool for an hour then sift some icing sugar over the top for serving.

Serve

Enjoy with some sweetened double whipped cream, if you wish.
