This pretty and pink Grapefruit Yogurt Bundt Cake is a soft, light and airy battered cake baked in a Bundt pan with a grapefruit glaze and a powdered sugar topping.

To make Grapefruit Yogurt Bundt Cake, you will need the following ingredients:
Preheat oven to 350 °F and generously grease a 10-15 cup Bundt pan with butter or cooking spray and lightly dust with powdered sugar.
In a medium bowl, whisk together 2½ cups flour, 1½ teaspoons baking powder, ½ teaspoon baking soda, and ½ teaspoon salt until combined.
In a large bowl, using your fingers, rub ¾ cup granulated sugar in 1 tablespoon grapefruit zest until oils begin to release and mixture becomes fragrant.
Add 2 eggs, 1 cup yogurt, ½ cup olive oil, ½ teaspoon vanilla extract and ½ cup fresh grapefruit juice. Whisk until everything is well combined.
Add dry ingredients to the bowl of wet ingredients and continue mixing until batter is combined and smooth. It is ok to have a few small lumps rather than over mixing the batter.
Pour batter into prepared Bundt pan and smooth over the top with a rubber spatula. Bake in preheated oven for 35-40 minutes until cooked and a wooden toothpick inserted into the center comes out clean.
In a microwave safe cup or bowl, add ⅓ cup fresh grapefruit juice and 1 tablespoon granulated sugar together.
Microwave mixture on high for about 1 minute until bubbling and sugar has melted. Stir a little then set aside to cool.
In a small mixing bowl, combine 2 tablespoons of the prepared glaze from step 8, 1 cup powdered sugar and a pinch of salt. Whisk until smooth and pourable.
Once finished baking, use a toothpick to immediately poke holes all over the surface of the hot cake. Slowly pour the prepared glaze over the hot cake and allow to soak in for about 10-15 minutes, then use a spatula to remove cake from the Bundt pan and transfer to a wire rack. Allow to cool.
Once cooled, drizzle with icing and serve!
