Ingredients

¾ cup + 2 tbsp Whole wheat flour (or other flour if you prefer)
2 tsp Baking powder
½ tsp Salt
½ tsp Cinnamon (optional)
2 Large eggs separated
1 cup Greek yogurt full-fat
1 tsp Vanilla extract
2 tbsp Brown sugar dark
1 tbsp Honey (optional, if you don't use it, substitute it with an extra tbsp of brown sugar)
1 cup Zucchini coarsely shredded
2-3 tbsp Butter for the pan

I make these Healthy Greek Yogurt Zucchini Pancakes for family breakfasts on special occasions like birthdays or first day of school holidays. These pancakes are fluffy, light, healthy and they take only a few minutes to prepare which is an added bonus!

This pancake batter is super easy to prepare but I must warn you – resist the urge to over mix! If you over mix your batter you will end up with tough, rubbery pancakes. Who has time for that?! To make these, I mix the batter together in stages. Then I simply drop spoonfuls of batter on a hot skillet and there you have it! No waiting for the batter to rest – simply mix (a little) and go!

So, how do you make Healthy Greek Yogurt Zucchini Pancakes?

Steps to make Healthy Greek Yogurt Zucchini Pancakes

Mix the dry ingredients together

Mix the flour, baking powder, salt, and cinnamon together in a large bowl.

Mix the egg yolks, yogurt, vanilla, brown sugar and honey

Whisk the egg yolks, Greek yogurt, vanilla, brown sugar, and honey together in a separate large bowl.

Combine the two mixtures

Mix the dry mixture with the wet ingredients and stir until they are just combined. Don't worry if there are a lot of lumps in the batter.

Beat the egg whites

Beat the egg whites in a stand mixer or with an electric mixer on high speed until stiff peaks form.

Fold in the egg whites

Fold in the egg whites to the batter. Stir well until fully incorporated.

Add the zucchini

Add the zucchini and mix until just incorporated.

Cook the pancakes

Melt a tablespoon of butter in a large pan or skillet over medium heat. Drop large spoon or ladlefuls of batter on the pan. Cook each pancake for 1-2 minutes on each side until there are no more air bubbles.

Repeat the process until you have used all the batter.

Serve

Serve immediately with your favorite toppings. I love a drizzle of honey and some mixed berries.
