Recipe Description

This Grilled Basil Chicken and Zucchini is a dish that I crave sometimes. I really think it is a perfect recipe. The dish combines chicken, zucchini with lime juice garlic and soy sauce which are great flavors together. It’s quick and there’s very little fuss. You’ll love it if you try it!

You start by cooking rice and making a sauce from garlic, lime zest and juice, soy sauce, sugar and chilli. Rub the zucchini and chicken with oil and season with salt and pepper and grill. Once cooked, chop up the chicken and zucchini, mix with the sauce and serve over rice. Super quick, easy and delicious!

    Heat the grill

    Preheat the grill to medium-low.

    Cook the rice according to the directions on the package.

    Prepare the sauce

    In a large bowl, zest the lime and squeeze in 2 tablespoons of lime juice. Grate the garlic finely into a bowl and stir in soy sauce, sugar, and chili. Mix well to combine.

    Prepare the chicken and zucchini for the grill

    Coat the chicken and zucchini each with a tablespoon of oil and season them with ¼ teaspoon each of salt and pepper.

    Grill the zucchini and chicken for about 3 minutes per side until the zucchini is just tender and the chicken is just cooked through.

    Transfer the zucchini and chicken to a cutting board and chop roughly. Mix with the sauce.
