These Grilled Chicken and Tomato Kebabs are not only healthy, they are really delicious and simple to make too! I love the basil pesto marinade which accompanies this kebab recipe. It packs a real flavor punch from the basil and garlic and it has a certain richness from the addition of grated Parmesan cheese.
Start by making the basil pesto marinade for the chicken. Marinate cubes of meat for at least one hour. Once the meat has marinated start assembling the kebabs. If you are using wooden skewers, make sure you soak them in water for at least 30 minutes. I usually use metal skewers to avoid this step! Thread tomatoes and chicken onto the skewers and grill them either on an outdoor or indoor grill.
To make the Grilled Chicken and Tomato Kebabs, you will need the following ingredients:
Place 1 cup of basil leaves, 1 clove of garlic, ¼ cup of Parmesan cheese, salt and pepper to taste in a food processor and pulse until smooth. Gradually pour in 3 tablespoons of olive oil while pulsing.
In a medium sized bowl, mix the chicken cubes with the pesto marinade and leave to marinate for at least one hour.
Take 8 pairs of skewers and thread chicken and tomatoes onto them to make 8 kebabs total. Start and end each kebab with a chicken cube.
Heat a grill (outdoor or indoor) over medium heat until hot. Clean the grates before cooking and spray them lightly with oil.
Place the kebabs on the hot grill. Cook for 3-4 minutes, then turn and continue to cook on the other side until the chicken is cooked through.
Serve with your favorite green salad and enjoy!
