1½ pounds Eggplants cut into ½-inch-thick slices
1 pound Tomatoes plum , chopped
4 tbsp Olive oil extra-virgin , divided
2 tsp Oregano fresh , chopped
1 clove Garlic grated
½ tsp Ground pepper
¼ tsp Crushed red pepper
½ tsp Salt
½ cup Basil chopped fresh
¼ cup Feta cheese crumbled , or shaved ricotta salata

Preheat grill

Preheat grill to medium-high heat.

Boil water

Bring a large pot of water to a boil.

Prepare tomatoes

In a large bowl, toss tomatoes to coat with 3 tablespoons oil, oregano, garlic, pepper, crushed red pepper and salt.

Grill eggplant

Brush eggplant with 1 tablespoon oil to coat and grill for 4 minutes, turning once, until tender and charred in places. Remove from heat and cool for 10 minutes.

Prepare tomato and eggplant mix

Chop eggplant into bite-size pieces and add to the bowl of tomatoes. Add basil and mix.

Cook pasta

Cook pasta in the pot of boiling water, according to package instructions. Once cooked, drain pasta from the liquid.

Serve cooked pasta in bowls with tomato mixture over each serving, and sprinkles of cheese for garnishing.
