Healthy Cauliflower Rice is a fantastic alternative side dish to rice or couscous. Not only does it taste delicious, but it’s quick and easy to prepare too. Start by pulsing cauliflower in the food processor until it resembles couscous.

To make this rice, start by cooking onions until golden. Add cauliflower and stir to combine. Season with salt and cook while stirring until the cauliflower softens. Remove the pan from the heat and spoon the cooked cauliflower into a large serving bowl. Garnish with parsley and drizzle with lemon juice. Taste and adjust salt. Serve warm.

Break a head of cauliflower into florets. Working in batches, pulse the cauliflower in a food processor until it resembles couscous.

Heat oil in a skillet over medium-high heat. Once warm, add onions and cook while stirring frequently until golden brown and soft.

Add cauliflower rice to the skillet and stir to combine.
