To make this salad, I start by making a mayo based dressing with onions, vinegar, jalapeno peppers, parsley, and olive oil. Then I use it to dress the sweet corn and tomatoes. That’s the basic recipe, but if I’m cooking for someone who doesn’t like the heat of the jalapeno, I’ll swap it for some red bell pepper.
To make this version of Healthy Corn Salad, you will need the following ingredients:
