This Healthy Corn Salad is a simple yet terrific vegetarian summer salad that you just have to make for your next cookout. People are always so impressed when I serve this colorful salad. It looks pretty and tastes absolutely delicious.
To make this salad, I start by making a mayo based dressing with onions, vinegar, jalapeno peppers, parsley, and olive oil. Then I use it to dress the sweet corn and tomatoes. That’s the basic recipe, but if I’m cooking for someone who doesn’t like the heat of the jalapeno, I’ll swap it for some red bell pepper.

Combine the mayo, green onions, vinegar, jalapeno peppers, parsley, and olive oil in a large salad bowl. Once the dressing has come together and is smooth, season with salt and pepper to taste.
