These Healthy Fruited Oatmeal Cookies are really healthy and simple to make. They are full of goodness with natural sugars coming from dried apricots and raisins. This recipe is great to make for a crowd – you’ll get 48 cookies from one batch!

I make these in my electric mixer – I beat butter, brown sugar, baking soda, salt, and allspice together to make the cookie dough. Then I add yogurt, egg, vanilla and flour, I finish them off by adding oats, apricots, raisins and walnuts.

Steps to make Healthy Fruited Oatmeal Cookies

Heat the oven and prepare a cookie sheet

Preheat the oven to 375 °F. Lightly grease a baking sheet with cooking spray and set it to one side.

Toast the oats

Place the rolled oats in a baking pan and bake in the oven for about ten minutes.

Make the cookie dough

Beat the butter quickly in an electric mixer. Add the brown sugar, baking soda, salt, and allspice and mix until fully combined.

Add the yogurt, egg and vanilla

Add the yogurt, egg and vanilla to the butter/sugar mixture and mix well.

Incorporate the flour

Beat in the flour.

Stir in the toasted oats, apricots, and walnuts

Remove the bowl from the mixer and stir in the toasted oats, apricots, raisins and walnuts with a wooden spoon.

Place the cookies on the baking sheet

Using two teaspoons, drop the cookie dough onto the cookie sheet. Allow around 2 inches between cookies because they will spread while cooking.

Bake

Bake in the oven for 9-11 minutes. The edges bottoms of the cookies will start to turn golden brown.

Leave to cool

Leave the cookies to cool on a wire rack.

Serve

Serve the cookies with a glass of milk!
