I use gluten free oats with pumpkin, fresh bananas, coconut milk, baking powder and one egg for the batter. Sweeten with maple syrup and flavored with pure vanilla extract and pumpkin pie spice. To make Healthy Pumpkin Pancakes, you will need the following ingredients:
In a food processor, blend all ingredients on high for about 1-2 minutes until completely combined and oats have broken down.
Heat griddle over medium-low heat and melt 1-2 teaspoons of oil or grass-fed butter.
Once the griddle is very hot, pour ¼ batter onto the center of the pan and cook for 2-3 minutes on both sides. Continue with remaining batter.
Serve with bananas, fruit, nuts, nut butter, maple syrup or any favorite toppings of your choice.
