I love to make this Herby Cauliflower Salad with Chickpeas in summertime to accompany some fish or grilled chicken. It has a fresh lemon dressing and the chickpeas add a filling element. The star of the show however is the cauliflower – uncooked and tender, it tastes amazing when combined with the other salad ingredients.
I start by placing the cauliflower florets in a bowl. Then I season the florets and make a dressing. When I combine the salad I like to use a combination of fresh herbs like parsley, dill, or mint. This salad improves the longer it marinates. When possible, leave the salad marinate before serving. Stir occasionally for about 30 minutes before serving. This salad will keep for up to one week once covered in the refrigerator.
To make my version of Herby Cauliflower Salad with Chickpeas, you will need the following ingredients:
Cut the leaves off the cauliflower and remove the core. Break the cauliflower into little florets and place them in a large bowl. Chop any long stems into small pieces and then add these to the bowl with florets.
Toss the florets with ½ a teaspoon of fine sea salt and ½ a teaspoon of ground black pepper until all the florets are evenly seasoned.
In a small jar or bottle combine 1 teaspoon finely grated lemon zest, ¼ cup of freshly squeezed lemon juice, ¼ cup of extra virgin olive oil, ¼ teaspoon of crushed red pepper and a pinch of salt. Shake vigorously to mix.
Add a can of chickpeas, ½ a cup of herbs, ½ a cup of pickled onions and the dressing to the cauliflower florets. Toss until everything is evenly coated.
Taste and add more salt, pepper or lemon juice as desired.
Leave to rest for 30 minutes before serving.
