This Honey-Mustard Chicken Tenders with Couscous recipe is one of my favorite recipes when I am trying to be healthy. The combination cuts the calories but none of the taste. To steam the carrots, simply bring an inch of water to a boil in a saucepan and pop them in a steamer basket fitted over the pot.
Coat chicken tenders with a mixture of honey mustard, oil, and salt. Bake the chicken tenders in the oven until cooked through. Steam carrots until just softened. Drain the water and return the cooked carrots to the empty pot. Add orange juice, butter, honey mustard, and salt and cook, stirring often, until the orange juice mixture coats the carrots. Serve the tenders with the carrots, sauce, and couscous and garnished with parsley.
To make my Honey-Mustard Chicken Tenders with Couscous, you will need the following ingredients:
Preheat the oven to 450 °F. Line a large rimmed baking sheet with parchment paper.
Fit a steamer basket to a saucepan and bring an inch of water to a boil in the bottom of the pan.
Combine 2 tablespoons of honey mustard with 2 teaspoons of oil and ¼ teaspoon of salt together in a large bowl.
Add 1 pound of chicken tenders. Stir until evenly coated with the honey-mustard mixture. Place the chicken pieces in a single layer on the prepared baking sheet.
Bake the tenders in the oven for 9-11 minutes.
Place 1 pound of sliced carrots in the steamer basket and steam for 4-6 minutes until soft, but not completely tender. Drain the water and return the carrots to the empty pot.
Add ¾ cup of orange juice, 1 tablespoon of butter, the remaining 1 teaspoon honey mustard, and the remaining ¼ teaspoon salt to the pot with the carrots.
Place the pot over medium-high heat. Cook for 4-6 minutes, stirring frequently, until the orange juice mixture lightly coats the carrots.
Serve the baked chicken tenders with the carrots, orange sauce, and couscous, garnished with freshly chopped parsley.
