These Honey Maple Roasted Carrots truly are one of my favorite Christmas side dish recipes. I know you will love them too. Sweet and sticky, these carrots are one of the best Christmas sides ever. They’ve been on my Christmas table ever since the first year I made them!
To make these roasted carrots, start by placing them on a prepared pan and drizzle them with olive oil, maple syrup and honey. Season them with coriander, sea salt and pepper. Toss to coat and spread the carrots out on the pan in a single layer. Roast in the oven until they are tender and some of the edges are caramelized. Sprinkle with sesame seeds and season to taste with salt and pepper. Serve in a festive serving bowl and scatter pomegranate arils over the top.
To make my version of Honey Maple Roasted Carrots, you will need the following ingredients:
Heat your oven to 450 °F. Lightly grease a baking sheet.
Place 2 pounds of carrots in the prepared pan and drizzle with 2 tablespoons of olive oil, 1 tablespoon of maple syrup and 2 tablespoons of honey. Season with 1½ teaspoons of coriander, 1 teaspoon of sea salt and ¼ teaspoon of pepper.
Toss well using your hands and spread in a single layer.
Roast the carrots in the oven for 10 minutes. Shake the pan to move. Return the pan to the oven and continue to cook for 15-20 minutes more, stirring every 5 minutes until the edges are caramelized.
Scatter 1 tablespoon of sesame seeds and the chopped thyme and chives over the roasted carrots and stir. Taste and season with a bit more sea salt and pepper, to taste.
Serve in your favorite festive serving bowl and sprinkle the pomegranate arils over the top.
