Start by preparing the apples. Toss the chopped apples with lemon juice to prevent browning. Use either a stand mixer or handheld to cream together the softened butter and sugar. To make the Italian Apple Cake, you will need the following ingredients:
Preheat the oven to 350 °F. Cover the bottom of a round 9-inch baking pan with parchment paper, grease with butter and coat with flour.
Peel and core the apples, then cut them into large chunks. Mix the apples with 2 tablespoons lemon juice and set aside.
In the bowl of a stand mixer, cream together ½ cup softened butter and ½ cup sugar until light and fluffy, about 3 minutes.
Add in 2 eggs, one at a time, beating well after each addition.
Add in 1 ¾ cups all-purpose flour and 3 teaspoons baking powder and mix until just combined. The batter should be soft and creamy.
Pour the batter into the prepared baking pan and smooth the top.
Arrange the apples on top, pushing them down into the mix.
In a small saucepan, melt ¼ cup butter and ¼ cup sugar. Whisk to combine.
Pour the topping over the apples.
Bake the cake until golden brown, the apples are caramelized and a skewer inserted in the center comes out clean with just a few crumbs attached, about 40 minutes to 55 minutes.
Remove the cake from the oven and transfer to a wire rack. Let cool for 10 minutes in the pan before removing it to a serving plate.
