This Jalapeño Popper Stuffed Chicken is a delicious creamy filled chicken dish with a spicy kick. I regularly make this jalapeño popper stuffed chicken on our Saturday movie nights. Now that the kids are older, they are open to trying new dishes and this chicken went down a treat with the whole family last time I made it.
I make this chicken in the hasselback style meaning that I make horizontal incisions half an inch apart, taking care not to slice right through the chicken breast. I then stuff these incisions with a cream cheese mixture, bacon and jalapeño peppers. This combination of ingredients makes my jalapeño popper stuffed chicken tasty and delicious!
To make Jalapeño Popper Stuffed Chicken, you will need the following ingredients:
Preheat the oven to 400 °F.
Slice 4 chicken breasts in hasselback style - make horizontal incisions half an inch apart, taking care not to slice right through the chicken breast.
Transfer the chicken to a bowl and season with salt and pepper.
Mix 6 ounces of softened cream cheese with ½ a cup of shredded mozzarella, ½ a cup of shredded Cheddar and 2 minced cloves of garlic together in a bowl. Season to taste with salt and pepper.
Stuff between the incisions on each chicken breast with bacon, sliced jalapeños and the cream cheese filling.
Place the chicken on a baking sheet and bake in the oven for about 25 minutes until the meat is cooked through.
Serve with baked potato skins.
