This Vegan Key Lime Pie Chia Pudding is the most delicious and tantalizing vegan dessert in my books. I just love it.
When limes are in season you can be sure these mini pudding jars are stocked up in my fridge. It is light and fresh and works great as a sweet breakfast to start your day or a wonderful choice to end any dinner party menu. The chia pudding is sweet and they key lime layer is sour, there is just nothing not to love about that flavor combination.
To make Vegan Key Lime Pie Chia Pudding, you will need the following ingredients:
In a bowl whisk the chia seeds, almond milk, key lime zest, maple syrup, and vanilla extract for 30 seconds until everything is well combined.
Refrigerate for 2 hours to overnight to allow your pudding to set, this allows the seeds to absorb enough liquid and become a pudding-like texture.
In a food processor, place the cashews, coconut milk, maple syrup, lime juice, lime zest and matcha powder and blend, scraping down any excess on the sides, until well combined and completely smooth.
Once the chia pudding is set, spoon the pudding evenly into 4 serving jars and pour the key lime mousse over the top. Refrigerate for another 2 hours to set again, before serving.
Store in the refrigerator, covered, for up to 7 days.
