I’ve hit another winner with this spectacular Lemon and Raspberry Coffee Cake recipe. This cake is extremely moist with 3 large eggs and yogurt used in the batter and filled with special fresh raspberries and a layer of lemon curd. The butter sugar streusel topping also has lemon zest to give your cake that extra pop finishing off each mouthful. Decorate yours beautifully and it can look impressive too!
To make Lemon and Raspberry Coffee Cake, you will need the following ingredients:
Preheat the oven to 350 °F.
In a bowl combine the ingredients for the streusel topping and 3 tablespoons butter through the mixture until crumbly. Set aside in the refrigerator to chill.
In a mixing bowl, sift the flour, baking powder, baking soda and salt and mix to combine then set aside.
In a separate bowl whisk the sugar and butter together.
Add eggs to the butter mixture and beat until light and fluffy.
Add yoghurt, lemon zest, lemon juice and vanilla extract to the egg mixture and stir until well mixed.
Add the dry ingredients slowly into the wet ingredients bowl in 3 alternating batches and mix just until well combined. Do not overmix.
Gently coat the frozen berries in a tablespoon of flour, so that they do not sink to the bottom of the cake and then, using a rubber spatula, fold the frozen berries into the cake batter.
Grease a 10-inch tube pan with butter and lightly flour.
Pour ⅔ of the cake batter into prepared pan, spread lemon curd over the batter and top with remaining ⅓ of cake batter.
Top the cake with all of the streusel topping prepared in step 2.
Bake cake for 50-60 minutes until the cake is golden brown on top and begins to slightly loosen from the sides of the baking pan.
Cool cake in the pan for at least 20 minutes before removing it.
In a small mixing bowl, stir the confectioners sugar and lemon juice together until a thin and smooth glaze forms.
Decorate your cake with drizzles of lemon glaze over, then slice and serve!
