Unlike traditional mousse, this one contains no eggs and is the simplest thing to whip up. First, cook strawberries, sugar, and a little water as the base. Then melt the marshmallows into the hot strawberry mixture. And finally, fold in some whipped heavy cream to complete the dessert. Spoon into individual serving dishes and leave in the fridge to set and chill. Yummy!
To make the Marshmallow Strawberry Mousse, you will need the following ingredients:
In a small bowl, combine 5.3 ounces hulled and diced strawberries, 1-2 tbsp granulated sugar, and 1 teaspoon finely chopped mint leaves. Set aside to release juices.
In a saucepan over medium heat, cook 5.3 ounces hulled and quartered strawberries, ¼ cup water, and 2 tablespoons granulated sugar for 3-5 minutes until soft. Then remove from the heat and pour into a large bowl.
In a blender, puree the strawberries until smooth.
Stir in 3.5 ounces marshmallows and mix until dissolved and well combined. Set aside to cool.
Meanwhile, using an electric mixer, whisk ¾ cup cold heavy cream until soft peaks form.
Fold half of the whipped cream into the cooled strawberry marshmallow mixture, and then fold in the rest.
Spoon into individual serving dishes.
Cover and chill at least 2 hours before serving.
To serve, garnish with strawberry topping and enjoy!
