You may have tried scones before but this Master Scones Recipe is really something like you’ve never tasted before. My secret ingredient in the recipe is the addition of heavy cream or buttermilk, making the scone extra dense, moist and simply scrumptious. I love filling my scones with berries and fruit and have chosen an orange, citrus icing as my topping for this particular recipe.
To make Master Scones Recipe, you will need the following ingredients:
In a large bowl, whisk 2 cups of all-purpose flour, ½ cup of granulated sugar, ½ teaspoon of salt, and 2½ teaspoons of baking powder until combined.
Use a box grater, cut 1 stick of frozen butter into the flour mixture and combine with a pastry cutter or fork until the mixture resembles pea-size, coarse crumbs. Transfer to the refrigerator or freezer for a few minutes, to chill.
In a separate mixing bowl, whisk ½ cup of heavy cream or buttermilk, 1 large egg and 1½ teaspoons of vanilla extract until combined.
Pour the wet mixture over the bowl of dry ingredients and mix until everything is moistened and combined. Fold in any optional add-ins such as 1 cup of chocolate chips, berries, nuts, fruits etc.
Roll out sticky dough onto a lightly floured surface and with lightly floured hands, roll into a ball. Shape into an 8-inch disc and use a sharp knife to cut into 8 wedges. For smaller scones, shape the dough into two 5-inch discs and then cut into 8 wedges.
Or prepare drop scones
Mix the dough a few more times for it to come together then separate into drop scones, about ¼ cup portion sizes, placed 3-inches apart on a lined baking sheet.
Brush scones with remaining heavy cream or buttermilk and sprinkle with a bit of coarse sugar on top.
Transfer to a lined baking sheet, about 3-inches apart and refrigerate for at least 15 minutes. You may need 2 baking sheets.
Bake in the preheated oven for about 18-26 minutes until golden brown and lightly golden on top. Bigger scones need more baking time. Allow to cool before adding toppings.
In a small mixing bowl, whisk ½ cup of confectioners' sugar with 1½ tablespoons of fresh orange juice until well combined into a smooth icing.
Once cooled, top baked scones with prepared orange icing drizzled over the top. Enjoy.
Keeps well at room temperature for about 2 days but best to store in the refrigerator for up to 5 days.
