To make Mediterranean Couscous Salad, you will need the following ingredients:
In 2-quart saucepan, bring the broth to a boil.
Add the couscous and stir before removing from the heat. Cover and let stand to cook for 5 minutes.
In a large bowl, toss the tomatoes, cucumber, olives, green onions, dill weed and couscous, to mix.
In a small mixing bowl, whisk the lemon juice, oil and salt together until well blended. Pour over couscous mixture.
Cover with plastic wrap and refrigerate for 1 hour to marinate the flavors.
Sprinkle with feta cheese for garnishing, just before serving.
