To make the Mediterranean Yellow Rice, you will need the following ingredients:
Heat 1 tablespoon olive oil in a Dutch oven or large pot over medium heat. Add ½ cup diced onion and cook for 2-3 minutes, stirring occasionally until the onions are soft and almost translucent.

Add 2 ¼ cups water, stir to mix well, and bring to a simmer.

Fluff the rice with a fork and fold in ¼ cup toasted pine nuts and 2 tablespoons chopped fresh cilantro. Adjust salt and black pepper pepper if needed.
