This Melon Peach Salad with Prosciutto is one of my favorite summer salads. I would go so far as to say that the flavor combination in this salad is perfect – juicy peach, sweet melon, punchy fresh basil and marjoram mixed with salty prosciutto. My mouth is watering as I write this!
To make this salad, start by tossing melon and peach with oil and vin cotto. Season the fruit with salt and pepper and leave to stand for 5 minutes before stirring in the cheese and herbs. To serve, transfer the salad to a platter. Top with slices of prosciutto and serve. Amazing!
To make my Melon Peach Salad with Prosciutto, you will need the following ingredients:
Toss sliced peach and melon in a bowl with 1 tablespoon of oil and 2 teaspoons of vin cotto.
Season the peach and melon mixture with salt and pepper to taste. Leave to stand for 5 minutes.
Stir in ½ a pound of mozzarella cheese and 2 tablespoons each of basil and marjoram.
Serve the salad on a serving platter and garnish with thin slices of prosciutto ham.
