This Mexican Hot Chocolate Pie is such a delicious chilled dessert to make for your Cinco de Mayo party this year. It boasts all the flavors that make Mexican hot chocolate different to normal hot chocolate – namely cinnamon for spiciness and cayenne pepper for heat!
Start this cake by mixing crushed graham crackers with butter, sugar and salt. Bake until golden. Make the pie filling by mixing milk and egg yolks with sugar, cornstarch, cinnamon, cayenne pepper and salt and bringing it to a boil before adding butter, vanilla and chocolate chips. Top with a whipped marshmallow topping and serve chilled. Yum!
To make Mexican Hot Chocolate Pie, you will need the following ingredients:
Preheat the oven to 350 °F. Lightly grease a pie dish with cooking spray.
Place 10 graham crackers in a food processor and pulse until they resemble fine crumbs. Transfer to a bowl and add 6 tablespoons of melted butter, ⅓ cup of granulated sugar and a pinch of kosher salt. Mix well until fully combined.
Transfer the graham cracker mixture to the pie dish and press down to make a crust. Bake in the oven for 8 - 10 minutes until the crust is golden. Remove from the oven and leave to cool.
Whisk 3 cups of whole milk and 4 egg yolks together in a bowl until fully combined.
Mix ¾ cup of sugar, ⅓ cup of cornstarch, 1½ teaspoons of cinnamon, ⅓ teaspoon of cayenne pepper and 1 teaspoon of salt together in a small saucepan until fully combined.
Pour the milk and egg mixture into the saucepan and whisk until there are no lumps remaining.
Bring the pie mixture to a boil. Reduce the heat and simmer for 1 minute.
Remove the saucepan from the heat. Add 2 tablespoons of butter, 1 teaspoon of vanilla extract and 2 cups of dark chocolate chips. Stir continuously until completely melted.
Pour the pie filling mixture into the prepared pie crust. Chill in the refrigerator for at least 2 hours until firm.
Mix 1 cup of marshmallow creme gently with 1 cup of whipped topping.
Spoon the marshmallow topping onto the center of the pie and spread it out evenly. Garnish with chocolate shavings and serve.
