Mexican Street Corn mania! By now you should know I’m famous for my barbecues and I’m always developing new ideas for sides to serve with my meat and these cook whole corns are definitely a top favorite.

Pop them on the grill with your meat, if you wish or cook them in a pan on the stovetop grill for a good 10 minutes and that’s all you need. Brush with mayonnaise and spice them up with chili, cotija cheese and freshly chopped cilantro to create your own delicious Mexican flavored corn.

Steps to make Mexican Street Corn (Elote)

Preheat grill

Preheat a grill or grill pan to medium-high heat.

Grill corn

Place the corn on the preheated pan and grill for 10 minutes, rotating sides often, until lightly charred all over.

Add flavor

Using a cooking brush, brush the cooked whole corns with a layer of mayonnaise before sprinkling with chili powder, cotija cheese and cilantro, all over.

Garnish with a lime wedge and enjoy warm.
