If I want to go all out for Mardi Gras, I make this rich and delicious Moon Rock Bread Pudding. It is rich, creamy and chocolatey and any time I make it for dinner guests, they love it and request the recipe. The secret ingredient in this pudding is the Hawaiian sweet rolls. These rolls are sweetened with pineapple juice and it makes them the perfect ingredient to elevate your bread pudding!
Start by toasting chunks of Hawaiian sweet roll. Prepare the bread pudding batter by mixing milk, cream, eggs and vanilla extract with sugar, cocoa powder and salt. Pour the batter over the toasted bread chunks in a baking dish. Sprinkle chocolate chips on top and bake in the oven. Serve hot drizzled with melted white chocolate and dusted with powdered sugar. To make Moon Rock Bread Pudding, you will need the following ingredients:
Preheat the oven to 350 °F.
Spread the bread quarters in an even layer on a large baking sheet. Bake for about 10 minutes until the bread is toasted.
Whisk 2 cups of milk, ⅓ cup of heavy cream, 4 large eggs, and a teaspoon of vanilla extract together in a large bowl.
Combine 1 1/2 cup of sugar, ½ cup of cocoa powder, and ½ teaspoon of salt in a separate bowl.
Add the dry ingredients to the wet ingredients and mix until fully incorporated.
Place the toasted bread in a medium sized baking dish. Pour over the milk mixture and make sure the bread is fully soaked through.
Sprinkle the top of the pudding with ¼ cup of chocolate chips.
Bake in the preheated oven for about 45 minutes until no visible liquid remains.
Allow the pudding to cool slightly before pouring over melted white chocolate.
Dust the top of the pudding with powdered sugar before bringing this dish to the table. Serve hot.
