I love no bake cheesecakes and this season our No Bake Cherry Cheesecake is one of my favorite treats. I don’t actually use fresh cherries in this recipe, instead I use a cherry pie filling on top of combined cream cheese and whipping cream for an extra smooth and creamy, delicious center. One of the reasons that I love this recipe is the simplicity it takes in “not baking” this cake!
To make No Bake Cherry Cheesecake, you will need the following ingredients:
In a mixing bowl combine 1¼ cup of graham crumbs and ¼ cup of melted butter until the mixture comes together.
Using either a pie plate or mini dessert glasses, press the base mixture into the bottom of the pan or glasses.
In a mixing bowl, whisk 1 cup of whipping cream until fluffy.
Add 1 pack of 8-oz cream cheese, 1 tablespoon of sugar and continue whisking until well combined. Pour into the glasses over the cracker base and smooth over the top.
Pour 1 can of cherry pie filling and evenly spread over the top and sprinkle a few more graham cracker crumbles over, if you wish.
Refrigerate for about 2 hours until set.
Serve and enjoy every bite!
