This Oatmeal Chocolate Chip Cookies recipe is the perfect, healthier substitute option to a usual chocolate chip cookie recipe, using less flour and adding oatmeal, instead. I am always looking for healthier adaptations to my baking recipes, ones that my kids won’t necessarily notice so that they can still enjoy their treats.
I have also used less sugar in this recipe so that the chocolate chips can bring the sweetness as well as raisins, if you wish! This recipe has no eggs, and does not need time to allow the dough to rise, so it’s the perfect, quick vegetarian baking recipe too!
To make Oatmeal Chocolate Chip Cookies, you will need the following ingredients:
In a bowl, beat the butter, white sugar, brown and vanilla, until light and fluffy.
Add flour and salt, and mix well.
Dissolve baking soda in boiling water and add to mixture.
Stir in rolled oats, raisins and chocolate chips.
Drop by teaspoonful onto ungreased cookie sheet. Bake at 350 °F, for 10-12 minutes. Don't over cook.
Allow to cool fully before serving.
