To make Orzo Tuna Salad with Tomatoes, you will need the following ingredients:
Cook ¾ cups of orzo pasta according to package instructions.
On serving plates, arrange 4 large tomatoes that have been sliced and place a whole basil leaf on top of each.
Once cooked, drain and rinse the orzo pasta and transfer to a large mixing bowl.
Mix in 1 pouch of tuna, 1 cup of mozzarella cheese and 3 tablespoons of fresh, minced basil and combine.
In a small bowl, whisk 2 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, ⅛ teaspoon of salt and ⅛ teaspoon of pepper until well combined. Drizzle over salad and toss to combine.
